Saucy Berry Citrus Oatmeal

This recipe is a nutrition-bomb for the body and super tasty thanks to the combination of refreshing berries and clementines. The ingredients selected contain many vital nutrients for the body. Chia seeds are a great source of omega 3 fatty acids, essential nutrient with anti-inflammatory properties. Oats are high in fibre and beta glucans, lowering cholesterol levels and boosting the immune system! Berries and clementine are both high in vitamin C, a powerful antioxidant involved in collagen production.

Ingredients
230 g Water (divided)
45 g Oats (quick or rolled)
50 g Blueberries (fresh or frozen)
100 g Strawberries (fresh or
frozen)
1/2 Clementines (peeled, sliced)
2 tbsps Chia Seeds

Directions
Bring 2/3 of the water to boil in a small saucepan. Add the oats. Reduce to a steady simmer and cook, stirring occasionally for about 5 minutes or until oats are tender and most of the water is absorbed. Set aside.

Wipe the saucepan clean and add the blueberries, strawberries, clementine, chia seeds and remaining water. Bring to a simmer and cook for 5 minutes or until tender and thick.

Transfer the oatmeal to a bowl or container if on-the-go, and top with the berry clementine sauce. Garnish with a slice of clementine (optional). Enjoy!
